Ramsay is one of the few butchers left in Scotland that still smokes bacon according to a time-honoured process. Our Ayrshire Roll is slowly smoked overnight in our traditional smokehouse. We use only use the lighter woods to enhance the flavour of the meat, not overpower it, which imparts a subtly authentic smoky flavour to Ramsay bacon.
